Potato scallops

Abstract

As a New South Welshperson, I may be struck down for not calling these ‘potato cakes’ or ‘potato fritters’, as they do in other parts of Australia.

‘Whatevs’, as the cool kids say. Good potato scallops are fluffy on the inside, with super-crunchy exteriors — I don’t care what you call them, just pass ’em to me!
