This is a traditional Filipino stew containing seafood and vegetables, with a strong tamarind flavour. When I first came across this dish, I immediately fell in love with it. I probably do not add enough tamarind to suit Pinoy tastes, but instead I have adjusted it to suit western palates. Feel free to make it more sour if you wish. The secret is, as with most soups, the stock — it should be a clear and flavoursome broth.
