Rice salads were one of my nonna's specialities - she loved to cook rice.
My grandmother made rice salad with all different colored rice, and with lots of vegetables, 'cause she liked a lot of crunch in the salad. It really gave it a lot of freshness. She was really into color, too, so that's probably one of the reasons she liked this mixture.
