Jerk pork

It doesn’t get more Caribbean than jerk pork and this dish is perfect for a Christmas gathering. Marinate the meat the night before, then place the whole lot in the oven and 3-4 hours later you’ve got melt in the mouth spicy pork belly. Adjust the amount of chillies you add to the marinade to suit.
