I really like meals that are simple to make, the ones that are perfectly suited for weeknight dinners when there always seem to be other distractions around. And to be honest, we all get a little lazy, so anything simple can be very appealing. This meal makes the most of your fresh eggs and the prolific vegies zucchini and spinach. You can serve it cold or hot, and when the zucchini is in season it makes a great spring meal with a fresh salad of all your garden leaves and flowers.
