A favourite hors d’oeuvre of provincial France, this simple arrangement of crisp, young, fresh, raw vegetables is popular with everyone. The prepared vegetables should be crisped in iced water. Serve vegetables arranged on a platter with aÏoli (garlic-flavoured mayonnaise) for dipping.
