Like spam musubi, Hawaiian shoyu chicken is a fusion of Japanese and Hawaiian flavours and has been referred to affectionately as Hawaii’s version of teriyaki. Shoyu, meaning soy sauce in Japanese, is combined with sugar, rice vinegar, garlic and ginger to create a delectable braising sauce for the chicken.
