A traditional Polish cream pie, karpatka is made with shortcrust pastry layered with the vanilla pudding cream.
"My mum used to make karpatka for us every spring as a treat. I’m so happy to have it at The Lion and Buffalo as we are now about to enter spring and celebrate our third year anniversary. The cake is named after the Karpaty Mountains as it resembles the mountain range, and many people in Poland say it was Pope John Paul’s favourite cake. The smell reminds me of waking up on Spring days and knowing my mother was baking it for us."
