Even as a Frenchman I love a good traditional Christmas cake, but sometimes you need a bit of a change and to shake things up, especially on Christmas day. So, this is my alternative to a classic fruit cake. Make sure you’ve got enough orange liqueur left over from cooking to ‘feed’ the cake after it has cooked – this keeps the cake moist and boozy, just as it should be.
