Clams with garlic and paprika

Shellfish like clams need very little fussing to make them sing and that’s exactly what I’ve done here. With such simple ingredients, it’s important to use good-quality olive oil and wine, and don’t skimp on the parsley as it really lifts the dish. Serve with plenty of crusty bread to mop up the delicious juices.
