Saffron, mascarpone and leatherwood cheesecake

Making desert on the boat seemed extra special for some reason. Normally, by the end of a day's sailing, we were exhausted and a block of chocolate and a nip of whisky was all we could manage before we flopped into our bunks. These little cheesecakes were worth the effort, though, and they showcase some of the best things from Tasmania.
