Elderberries grow profusely in our region, often on the sides of the road and as hedgerows. In late spring and early summer the first fragrant flowers appear. Creamy at first then becoming white, they have a strong sweet perfume. Elderflower syrups, cordials, sorbets and fritters will only be as scented as the original flower. When picking, choose the best creamiest blooms and do not wait until too late in the season. English cook and author Sophie Grigson was a visiting guest chef at Lake House.
