All cupcakes should be beautifully light and sponge-like, just like these ones. The real fun of cupcakes is in the decorating. You can go simple, perhaps chocolate ganache and silver cachous, or try white icing with those pretty iced flowers from cake decorating shops. I love dolly mixture on mine, but you can use jelly beans, smarties, M&Ms, crushed honeycomb and just about any form of chocolate. MCLevel of difficulty easy
